Banana Bread

Banana Bread 


3 medium ripe bananas + 1 banana

1/2 tsp vanilla extract 

1 egg 

3 Tbsp coconut oil, melted 

1/4 cup sugar 

1/4 cup packed brown sugar 

2-3 Tbsp maple syrup 

3 1/2 tsp baking powder 

3/4 tsp sea salt 

1/2 tsp cinnamon powder 

3/4 cup dairy free milk 

1 1/4 cup almond meal 

1 1/4 cup GF flour blend 

1 1/4 cup GF oats 


  1. Pre-heat oven on 350°F and line a 9 x 5 loaf pan 
  2. Smash bananas in a large bowl 
  3. Mix in all ingredients but oats, almond meal and GF flour 
  4. Add last dry ingredients and mix in gently 
  5. Pour batter in the pan 
  6. Cut a banana in half and put it on top of the dough and drizzle some brown sugar 7. Bake it for 45 min or until a knife come clean.
